Taco Seasoning

Ingredients

1 tsp. garlic powder
2 tsp. cumin
1/2 tsp. black pepper
1 tsp. red pepper flakes
1 Tbsp. chili powder
1/2 tsp. onion powder
1/2 tsp. oregano

Directions

Mix all together and store in a glass jar with a tight fitting lid. Store at room temperature.


Bread flour


Difficulty: Easy

Ingredients

all-purpose flour
vital wheat gluten

Directions

For every one cup of all-purpose flour, add one tablespoon vital wheat gluten. For an even higher gluten content, add two tablespoons per cup



Homemade mayo

Difficulty: Easy

Ingredients

4 egg yolks
2 tablespoons Dijon mustard
1/4 cup white wine vinegar
1/2 teaspoon salt
2 cups canola oil

Directions

Place egg yolks, Dijon mustard, white wine vinegar and salt in food processor bowl, pulse 5 seconds. Slowly drizzle in 2 cups canola oil, processing until oil is emulsified in the egg mixture.


Cake flour

Ingredients

all-purpose flour
cornstarch

Directions

For every one cup of all-purpose flour, add two tablespoons cornstarch.


Evaporated milk.
Difficulty: Easy

Ingredients

Equal to 1 cup:
2/3 cup dry milk powder
3/4 cup water
Equal to 1 (12 oz.) can:
1 1/4 c. water
1 c. dry milk

Directions

Mix together.
I have used this as a substitute for heavy cream in some of my recipes.


Poultry seasoning
Difficulty: Easy
Servings: 5 Tbsp

Ingredients

2 Tbsp sage
1 Tbsp thyme
1 Tbsp marjoram
1 Tbsp savory
1/2 tsp ground black pepper
1/8 tsp cloves

Directions

Mix all together.


Italian seasoning
Difficulty: Easy
Servings: 1 tsp

Ingredients

1/4 tsp oregano
1/4 tsp marjoram
1/4 tsp basil
1/8 tsp sage

Directions

Mix all together.


Pumpkin Pie Spice
Difficulty: Easy
Servings: 1 1/2 tsp

Ingredients

1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp allspice
1/4 tsp ginger

Directions

Mix all together.


Apple pie spice

Servings: 4 Tbsp

Ingredients

2 Tbsp ground cinnamon
1 Tbsp ground nutmeg
1/2 Tbsp ground allspice
1/2 Tbsp ground cloves

Directions

Mix all together.


Sweetened Condencd Milk
Difficulty: Easy
Servings: 1 can

Ingredients

1/2 cup cold water
1 1/3 cup nonfat dry milk powder
3/4 cup sugar
1 tsp vanilla

Directions

Stir milk into cold water. Microwave on high 45 seconds to one minute until steaming. Stir in sugar and vanilla. Refrigerate until cool before using.

Corn syrup
Difficulty: Easy
Servings: Makes almost 2 cups
Cook Time: 15 minutes  

Ingredients

2 c. white sugar
3/4 c. water
1/4 tsp. cream of tartar
Dash of salt

Directions

Combine all ingredients in a heavy, large pan. Stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage. Stir often. Cool syrup and store in a covered container at room temperature. It will keep for about 2 months




Seasoning salt
Difficulty: Easy
Servings: approx 3/4 cup -- almost fills a 6 oz jar

Ingredients

2 Tbsp pepper
1 Tbsp chicken bouillon powder
2 tsp onion powder
1 Tbsp garlic powder
1 tsp cumin powder
1 tsp dry marjoram leaves
1 Tbsp minced parsley
1 tsp paprika
1/2 tsp curry powder
1 Tbsp chili powder
1 Tbsp lemon peel, dried and powdered

Directions

Combine all ingredients and mix well. You can whir this through a spice grinder to chop up the parsley and marjoram, or not, it’s your call! Store in jar.


Coffee creamer powdered
Difficulty: Easy
Servings: 3/4 cup
Prep Time: 5 min  

Ingredients

1/2 cup instant non-fat dry milk
1 tsp lecithin granules (works as an emulsifier)
1/4 cup powdered sugar

Directions

Put the lecithin granules through a spice grinder. I tried in my little food chopper, but it just didn't produce a fine powder.
Combine ingredients in blender or food chopper. Blend until everything is mixed well.



Cool whip
Difficulty: Easy
Servings: 2 Cups

Ingredients

1 teaspoon gelatin
2 teaspoons cold water
3 tablespoons boiling water
1/2 cup ice water
1/2 cup nonfat dry milk
3 tablespoons sugar
3 tablespoons oil

Directions

Chill a small mixing bowl. Soften gelatin with 2 teaspoons cold water, then add boiling water, stirring until gelatin is completely dissolved. Cool until tepid. Place ice water and nonfat dry milk in the chilled bowl. Beat at high speed until the mixture forms stiff peaks. Add sugar, still beating, then oil and gelatin. Place in freezer about 15 minutes, then transfer to refrigerator until ready for use. Stir before using to retain creamy texture. Makes 2 cups.




Baking Powder
Difficulty: Easy
Servings: 1 tsp

Ingredients

1 tsp:
1/2 tsp cream of tartar
1/4 tsp baking soda

Directions

Mix together.






 onion soup mix


This is a recipe that I put together myself after researching what was in Lipton’s Onion Soup Mix. I use low-sodium beef bouillon. You may want to add salt to your taste. You could use crushed celery seed if you don’t have dried celery, too.

Servings: approx 4 packets worth
Ingredients

1 cup minced onion
1/3 cup + 2 Tbsp beef bouillon
1 1/2 Tbsp onion powder
1/4 tsp dried celery
Directions

Combine all ingredients. Store in jar.
About 5 Tbsp of mix are equal to 1 – 1.25 oz pkg.
To make dip:
Combine 5 Tbsp with 1 pint sour cream.
I usually use about 1/4 cup mix when using in dishes calling for onion soup mix.






Cocoa mix

1 cup Powdered Sugar
1 cup Unsweetened Cocoa Powder
1/2 cup Powdered Coffee Creamer
1/2 cup Chocolate Malt Ovaltine
Instructions
# 1 Thoroughly mix all ingredients, I use a fork to combine powders. Transfer to an air tight container and use within three months.

Whipped Cream With Canned Evaporated Milk

Ingredients
12 ounce can evaporated milk
1/2-3/4 cup confectioner's sugar
1 teaspoon vanilla
Instructions
1. Place can of milk in freezer for thirty minutes (use a timer so you don't forget!). While that is getting
cold, place mixing bowl and beaters (or whisk attachment) in refrigerator or freezer as well.
2. Pour chilled evaporated milk into mixing bowl and beat at high speed for 1 minute, or until foamy.
Add sugar and vanilla. Beat again for about two minutes, or until thick and creamy.
3. Serve immediately
Note: This is great on top of desserts, fruit salads, pies, custards, etc. However, this has to
be served as soon as it is made as it won't hold up for more than thirty minutes or so.
